food: this week’s menu 5/1/17

There’s something about the 1st of the month that I love. It’s a clean slate, a new beginning, and a chance to start fresh. So this week you’ll start to see my newly-conceptualized TWB come to life starting with my menu. Because I feel like I talk about food all the time but it’s not a true reflection of what I’m actually EATING.

So I want to use these posts as inspiration (?) – maybe there’s a better word because I’m not Mother Theresa over here or anything truly inspirational, I’m just being like yo this is what I’m eating this week – but also a place to link new recipes I’m trying and share some of my own along the way.

What am I eating this week then, you ask?

BREAKFASTS

Oh – backstory here – I’m trying to get into the workout groove (AGAIN. I know. I swear I will never stop trying y’all) and I like working out in the morning but it’s such a scramble (pun intended) trying to eat breakfast on-the-go because I am a diva and like a warm breakfast. Aka eggs. And they don’t travel well.

Anyway I stumbled upon this bowl on another blog and I’m going to try to make it this week.

Minus the cheese & substituting barley for quinoa. And scrambled eggs for poached. And some mushrooms. OK yeah I guess it’s totally different LOL. But it’ll look a little something like this:

  • 2 eggs scrambled
  • 1 cup cooked barley (I think that’s barley in the photo, no? I cooked mine with Chicken Bone Broth for all the added benefits of the collagen and gelatin found in bone broth versus regular chicken broth – plus it packs 9g of protein per 1 cup serving which helps keep me SO much fuller)
  • 1 cup cooked asparagus
  • 1 cup sautéed mushrooms
  • 1 cup arugula, raw

LUNCHES

Since my breakfasts are so high-maintenance I’m keeping this one SUPER simple. A grocery store near us – Mariano’s – sells the tastiest pre-marinated chicken breasts. So I’m taking advantage of this. And then tossing some veggies in the oven because I love roasted veggies & they reheat so well.

  • Grilled chicken
  • Roasted broccoli
  • Roasted beets (first time trying this, super excited about it though!)
  • Roasted carrots

DINNERS

Dinners are always a super-dramatic topic for Ben & I because we have different carb needs (I’m a Lion sleeper and try to avoid carbs at dinner – I will totes do a post on this soon) so we have to compromise quite a bit on joint meals. But typically we have a rule, whoever cooks gets to pick the meals. Easy enough, right?! This week…

  • Chicken lettuce wraps made with the same seasonings as my Whole 30 Stir Fry, but served up in a lettuce cup instead of with the veggies.
  • Pork chops with spinach & sautéed onion. Pork is definitely one of our favorite meats to cook. We just cover it in some seasonings, bake it in the oven at 375 for 25-or-so minutes, and serve it up with our favorite veggies.

We typically stick to 3 dinners max, because any more than that and we always end up wasting food without fail. This week I have dinner plans one night and Ben is traveling, so we only got 2.

coffee talk: i’m back, y’all

Ummmm HEY GUYS! What the heck is up!? And where do I even start?! I have to say, I missed you guys. I’ve missed our chats. I’ve missed our convos. And I missed WRITING.

Well, actually I didn’t. But I’ll explain.

So grab your coffee and let’s chat for the first time in FOR-EV-ER. It’s such a dreary, rainy morning here – perfect for my first coffee talk in a month. I just want to curl up in bed with my coffee and light some candles and read and binge-watch 13 Reasons Why.

Anyway.

I’m hoping our friendship is just one of those you can just pick back up where you left it, you know?

And for anyone who is new to my blog, the reason for this really dramatic introduction is because I look a little bit of an unplanned hiatus.

We haven’t talked in a little over a month.

Last month, I was really struggling with figuring out the end game for my blog. As blogging got more and more commercialized, I lost more and more interest, until I had absolutely no desire to work on it. So at the urging of my mom (Mumsy) and my boyfriend Ben, I took a break.

I went to Mexico for the first time.

I moved.

I spent a weekend at the beach with my best friend for her bachelorette party.

I broke out in some unfortunate side effects from the stress of it all (not that going to Mexico and the beach is stressful, but the move in the middle of it all REALLY threw me off).

And this week, I have finally felt the desire to write.

When I originally took my hiatus, I seriously thought I would still write. I thought I’d just wake up a little early every morning, sit down at my computer, and work on it a little bit. And then I’d have this amazing archive of content ready to go when I came back.

But I literally felt zero desire to write.

And that’s OK.

I think a month off was good for me.

But DANG do I feel out of practice lol. I feel like this post has been so hard to write – not because it’s deeply emotional or anything – but because it used to come so easy, and now this is taking a littttttle more effort to find the words.

I’m sure I’ll get back in the swing of things.

So let’s cheers to getting back together.

And you guys know the drill…

Coffee Talk: All The Blogging Feels

Hey friends! How is everyone doing today?! I am down here in Tampa working and somehow I managed to get SICK. Who gets a cold in FLORIDA? This girl. Yup. I am a stuffy, snotty, sneezy, sleepy mess of a person today. And work is non-negotiable. So since I’m stubborn as heck and don’t like to take medicine, I’m packing tissues and drinking a TON of coffee to get me prepped for this day.

Oh and speaking of coffee, you have yours… right?

Let’s take a sip together. Because it’s Thursday. And that’s just what we do on Thursdays. Except for last Thursday. When I was kind of a hot mess.

Also I have to admit I feel SO bad for not posting anything Tuesday but being out of town and traveling on Sunday (which is when I usually work on meal prepping & recipes) made it tough to get anything done for the blog.

But being here has kind of brought me to this realization. Because if I had really wanted to get something done, honestly, I could have.

You know?

I feel like I’m having some weird feelings toward blogging lately. I’m sure you guys can tell. I really haven’t been posting too much on here. And when I do it just feels a little rushed.

I tried to create a content calendar, I’ve been trying to step up my Instagram game, hoping to reignite this little flame inside me but right now it’s just a little flicker of light.

So I thought I would open up about this a little bit today and tell you guys all my blogging feels. Because if my blog was my boyfriend, right now we’d be having that talk like I think I need some space.

But I don’t want to break up. I’ve just been feeling a little unmotivated to really TRY the last couple of weeks.

You know what I mean?

Honestly so much of my frustration comes from how blogging has been evolving over the past few months. I get on Instagram now and I just feel like I’m looking at a magazine. With ads. And sponsored posts. And I don’t even see my friends on there anymore! You know what I mean?

My entire feed is BLOGGERS. And even as a blogger, I know this is like probably really uncool to say but it is really starting to annoy me.

 

I need a sip of coffee. I feel like that was bold to say.

SLURP.

But I really have no interest in seeing a blogger posing next to a roll of paper towels with the brand logo gleaming in the light and trying to make it look natural. Or seeing a style blogger trying on an outfit in a dressing room and linking the outfit for commission even though I want to scream I KNOW YOU AREN’T EVEN BUYING THAT!

So why does that even bother me so dang much?

Well because it makes me question the sacrifices it takes to blog all the time. Like the Sundays spent behind a computer screen instead of outside living life. Or the nights I barely even talk to Ben because IHAVETOPOSTOMG. Or the days I’m late for work because I had to get that photo justtttt rightttttt!

And it just makes me think…

Is this what I’m working so hard for? So I can promote paper towels and probiotics and open my mail on my Instagram story?

And I get it – you have to hustle and you have to get paid and you gotta do what you gotta do to pay the bills. I’m not judging. And I don’t do this for a living, so I don’t understand the pressures and stresses of being self-employed.

I’m just having some trouble seeing myself do the same thing.

You know?

It’s just something I’ve been kind of struggling with internally, and I didn’t want to talk about it out loud because I love my blog & I love writing & I love sharing ideas. And people have told me that I’ve inspired them to eat healthier or try a Whole 30 and that is SO meaningful to me!

But my Type A self is just having some trouble half-assing it. Because it feels like I’ve been running this marathon for almost two years and all that waits for me at the finish line is a Skinny Tea sponsorship or something.

(OBVIOUSLY I’m being dramatic)

Does this mean I’m done blogging?

HECK NO!!!!!!

I love it.

I am just letting you know why I haven’t been on my A-game lately. Because I feel like we’re friends and I felt like it was only right to let you know my thoughts.

So.

With that being said.

I honestly feel a TON better being able to type this all out and get it off my chest. It really has been weighing on me.

And I’m not sure if I’ll have a new post for you next Tuesday but if an idea comes to me I absolutely will. I still have so much that I want to share.

Nowwww it’s time for you guys to tell me your thoughts on this.

Life Lately

Good morning friends! Happy Thursday! Y’all… today is just one of those days. I’m SO tired. I’m grumpy. My cat woke me up at 5 AM – AGAIN (I think the sun is just coming up earlier and she thinks it’s later in the morning… that’s what I’m telling myself at least). Then she HISSED at me (!!). And to top it all off my eyebrows are looking more like distant cousins than sisters and I just look like a disheveled Muppet.

BUT.

IT’S THURSDAY.

So I’m going to shake off the grumpies and talk to you guys! Because that makes everything better amiright?!

This week, though, I am going to take a week off the coffee talk. I will for sure pick up next week! But it’s one of those weeks that I just don’t want to force it, you know?

So instead, I wanted to share some stuff going on in my life lately! It’ll be a little mix of tidbits/life/whatever. I’m just going with the flow, ya feel?

And don’t worry, I still totally have my coffee in-hand.

You guys know I’ve been obsessed with my new natural deodorant, right? Well Twist of Lemons tested over 17 brands and guess which one was the winner????

Last week I ordered a derma-roller after a reader’s suggestion and reading this post. I cannot wait to try it out!!!

Here are 20 delicious meal-prep ideas. I love posts like this – even if I don’t follow these recipes exactly, they’re so good for inspiration!!

Since we found our new apartment I have been searching nonstop for furniture and décor. Our new place has these amazing dark brown wood ceilings (I CANNOT wait to share pics!!!) so I’ve been absolutely LOVING inspo for light, linen-y fabrics & dark wood furniture (which is totally different from my usual style). I CANNOT WAIT TO DECORATE!

Now I want to share a couple of my current obsessions.

My Newest Breakfast Obsession: Kite Hill Chive Cream Cheese made with Almond Milk.

You guys. this stuff changes lives. It is literally so good that the first time I had it, I sat alone on the couch saying “MMMMM!!!!” over and over with every bite.

In the mornings I’ve been toasting up some sourdough bread, schpreading some of this chivey goodness on it, and putting two fried eggs on top with some Himalayan pink sea salt & pepper. O. M. G.

And P.S. this isn’t sponsored in any way shape or form I just literally love it.

My Newest Shoe Obsession: next week I am traveling for work and I needed a good pair of work shoes (because my office is so casual I’m usually rockin’ my white Vans & jeans) so I FINALLY invested in these beauties!!!

I am SO excited. I’ve been eyeing them for awhile. They’re perfect for jeans, and also a good shoe to wear into the office for Spring because they’re business in the front party in the back.

Ok you guys. I know this is an abrupt ending to a post that was literally all over the place, but that pretty much sums up my life lately.

Protein-Packed, 3-Ingredient Angel Food Cake Smoothie

Hi friends!! How is everyone doing today!? I’m sitting here with the window open, a nice little breeze coming in, and a HUGE mug of (much needed) coffee. Oh, and I’m also kind of running late. So this post will probz be short & sweet.

But y’all… I have some news.

BIG, BIG NEWS.

(I’m totally being sarcastic here btw…)

But I’ve been WORKING OUT!

This is a pretty big deal. I eat really well about 90% of the time, which has helped me from gaining weight from sitting in a chair at work all day, but I haven’t been consistently working out for probably a solid year. (Not proud, btw). One day though I just got the itch to move and I’ve been working out ever since.

It’s been like, a week. It’s no big deal.

I’m talking cardio. Running. Rowing. Burpees (!!!!). Weights. The whole shebang.

So since I’m basically Jillian Michaels over here now, there’s something new that’s pretty important to me and that’s PROTEIN.

But those protein powders at the grocery just have too much in them for me to be OK with drinking them on a day-to-day basis. I don’t like eating or drinking stuff that I have no clue what 99% of the ingredients actually mean.

So I took matters into my own blender and found the TASTIEST little protein smoothie, inspired by my friend Katie (@therawpineapple_) who mentioned she made something similar recently and it sounded SO GOOD.

It’s an ANGEL. FOOD. CAKE. SMOOTHIE.

And it’s completely natural, dairy-free, soy-free, gluten-free, sugar-free, sweetener-free, banana-free, and booger-free.

I was just seeing if you were still reading.

LOL I’M SO IMMATURE.

Yes, I’ve had a lot of coffee.

ANYWAY.

Let’s get to it, shall we? Because I know you totes want to run to the store and make it right now. (Because it also makes a perfect sweet treat!!)

Ingredients:

YES, THAT IS IT!

Directions:

(This part is even easier)

  • Put all the ingredients in a blender & blend it up.

Yup.

(Please note: My blender broke about 2 minutes after this was taken. A few curse words were spewed. BUT – the good news is I found out my food processor is a perfect smoothie making substitute! So if you only have a food processor – it works in there too!)

If you want to get really fancy (and make it a little chunkier) you can also freeze your cashew milk in an ice cube tray and it will have a frostier consistency. Or you can add a banana. But then it wouldn’t be 3 ingredient and my title would be a LIE!!!

Ok. So that’s it. It’s really easy. And PACKED with protein. Literally 20 grams. And collagen to make you pretty (read more about why collagen has helped my skin here). The strawberries are amazing anti-oxidants, and the coconut water in the Vanilla Peptides helps you rehydrate.
